Thyme is typical of the Mediterranean garrigue and of Provence. Baume des Anges thyme is a population of wild thyme that grows in Les Roches, above the Rhône.
Each plant has its own identity and contributes to the scent of the whole. Underlying the characteristic notes of thyme, there are mingled hints of lavender, rosemary, sage, rose and lemon. This delicate complexity is accentuated by the fact that we harvest thyme in flower, around the first of May.
