25g of butter
25cl chicken stock or fish stock
12 cl single cream
1 small sprig of fresh basil
4 sprays of blissful plant extract of large green basil (Baume des Anges)

Sweat the finely sliced mushrooms in butter, add the remaining ingredients, bring to a gentle boil and keep it there for 10 minutes.
Mix until smooth, filter and adjust the seasoning. Keep warm. Emulsify and add one spray of extract of large green basil on each plate before serving.
